If you're planning a more formal event, my delicious shoulders make a very impressive presentation when served by a carver. This roast is distinctively finished in the traditional pit-cooked style, with a blacked outer shell and golden-red accents and a luscious white interior with pink smoked edging. Each slice is beautifully colored, sinfully tender and deeply flavorful. One taste and you'll know exactly why Southerners of old made the shoulder their first choice for hickory-smoked barbecue.
