Gardner's Barbecue Sauces:
I am pleased to offer my customers three distinct barbecue sauces.  Each of these represents what I believe to be the perfect complement to my traditional hickory-smoked meats.  Gardner's Sauces are prepared with the same careful attention to quality and historic accuracy as are each of my pork and beef offerings.  The spices are matched to those seasonings that I use in the preparation of my meats.

These are sauces representative of the deep barbecue traditions of North Carolina as well as of The Old Dominion.  They are rich and flavorful, not too hot, but very spicy.  Personally, I love hot barbecue sauce, but I know that many customers prefer a milder recipe.  My sauces are by no means mild, but they are not overly hot.  If you like very hot sauce I would encourage you to begin with one of my barbecue sauces and then add your favorite hot or pepper sauce to it.

Gardner's Traditional Virginia Barbecue Sauce for Pork:
A classic Virginia pork condiment barbecue sauce with a lively vinegar base.  Ingredients also include a mild amount of Tomato Paste, Sugar, Salt, Peppers, Lemon Juice and my secret mix of select spices.

A carefully crafted variation of my classic Pork Barbecue Sauce with a particular blend of spices matched to my beef barbecue offerings and a little less sugar.

Aunt Pat's Barbecue Sauce:
This is the same sauce recipe that I use in the basting of my Aunt Pat's Spicy Stuffed Tenderloin.  This is a traditional North Carolina Barbecue Sauce with a unique blend of peppers, vegetables and spices.  It's not hot, but this barbecue sauce is truly an explosion of flavor.  This sauce is intended for pork.

Note:  I would recommend that if you select Aunt Pat's Sauce that you apply it too your Gardner's Tenderloin before heating.  Simply unwrap the foil of your tenderloin before you place it in your oven, poor Aunt Pat's Sauce generously along the top of the pork tenderloin, and then re-close the foil and follow the regular heating directions on tenderloin label.

A Little Bit About Barbecue Sauce:
We appreciate the fact that Barbecue Sauce is a very individual thing. This one of the reasons that most of our barbecue offerings are prepared without sauce basting.  If you enjoy a particular barbecue sauce, we would like to encourage you to serve our barbecue with your favorite sauce.  However, please keep in mind that Gardner's loins and pulled pork are carefully seasoned and spiced so as to be enjoyed without the flavoring of sauces.  This is why we always recommend that you serve any barbecue sauce as a condiment.

In truth, the historic tradition of Southern hickory-smoked meats seldom include sauce basting.  The reason for this is that a very important part of the culinary art of creating perfectly smoked pork is in the meticulous creation of the meat's finish (or its exterior).  Gardner's Barbecue pork loins are smoked in such as way as to keep the charred surface of the meat to an immaculate minimum. When you look at a sliced profile of my tenderloin the exterior is virtually imperceptible and the beautiful golden-red coloring of the hickory smoking process is dominant.

A primary reason for sauce basting is very obvious; it retards the charring of the meat during the slow smoking process.  Rising flame or excessive heat can easily burn and char pork and beef well beyond what is desirable. Constant sauce basting is a means of controlling that burning.  The 100% hickory fire is constantly attended to and the temperature is held at 225  degrees.  These precise conditions create the delicate finish that is the single most distinguishing characteristic of Gardner's Hickory-Smoked Meats.  The precise cooking and perfect seasoning of our barbecue make barbecue sauce a personal choice rather than a necessity.  READ MORE ABOUT THE ART & TRADITION OF GARDNER'S FINE SMOKED MEATS

When He Tasted Our Barbecue Sauce for Pork
There are a number of other barbecue sauces that may be available at your local grocers or gourmet foods store.  For traditional North Carolina Sauce I love Scott's Barbecue Sauce.  I am also very fond of Maurice's Barbecue Sauce when it comes to classic South Carolina sauce for pork.  Recently, Johnboy & Billy's Hot Barbecue Sauce has caught my eye and if you like it hot, this is a very nice complement to our pork loins.
