Founded in the great heritage of fine Southern cuisine, is the wonderful tradition of sweet pork. When this delicate sugar-curing process is combined with the delectable flavor of pork and the delicious characteristics of true hickory-smoking, the result is something very beautiful indeed. Our Sugar-Smoked Loin is straight from the tables of 18th Century Virginia.
We begin with a lovely 4 pound pork roast. Tie the meat with premium Virginia bacon, and then sugar-cure the wrapped tenderloin in a unique 12-hour curing process that allows the sugars to penetrate deep into the meat.
When the tenderizing sugaring process is complete, the roast is placed in the smoker over smoldering hickory coals and slow-roasted for up to three hours. When the tenderloin is done to a turn, it is removed from the fire, double-wrapped in heavy foil, sealed and quick-frozen.
It makes a distinctive and beautiful entrée for a very memorable fine dining experience. It is also a wonderful meat for hors d'oeuvres because the rich flavor enlivens every other that it embraces.
