These incomparable ribeye beefsteaks are cut about two inches thick to insure precise hickory-smoking. They are lightly seasoned, tied with premium Virginia bacon and slow-smoked for between one and two hours. While connoisseurs of fine beef usually prefer their cuts rare, the full expression of hickory flavor requires that they be grilled a little longer. This is the reason for the unusually thick cut. These steaks are medium-rare with a golden-red hickory exterior gradating to a pinkish-red center inch. Tender, beautifully marbled and richly flavorful, these deliciously crafted ribeyes are a true testament to fine smoked beef.
