We want to make sure that every customer understands our shipping method. We ship UPS Second-Day Air, but that does not mean that your order will arrive in two days. Gardner's Barbecue is FRESHLY PREPARED! We do not ship pre-cooked or pre-frozen meats. Your order is prepared only after you have placed it online through PayPal. We collect orders through the week, suppliers deliver on Friday, and your order is prepared Saturday, Sunday, Monday or Tuesday depending upon your selection. Our smokers are regulated and the hickory fires maintained for specific cuts of meat on specific days. For example: large roasts are smoked more slowly at lower temperatures and this requires very careful attention to the fire. Also, our specially cured selections require an additional 18 hours of preparation time to allow the sugars, salt and spices to penetrate the meat. It is this precise attention to detail that insures the quality of every order. It takes time to adhere to 200 year-old traditions, but the flavor makes it all worthwhile. The best rule of thumb is to expect your order on the Friday of the week following the time that you placed it with us. In Virginia ease that translates, "y'all rest easy... it'll be ready directly. Oh but when it's done... it'll be as fine as frog hair split three ways!"
"What cuts of pork do you use in your North Carolina Style chopped and pulled pork barbeque?"
Gardner's Barbecue uses ONLY TENDER, PREMIUM PORK LOINS for both our North Carolina and our Virginia style pulled and chopped BBQ.
"What makes your barbecue taste so different from other Barbecue?"
There are many reasons why our Hickory-Smoked Meats taste different. The big reason is that they really are slow smoked over hickory wood and nothing but hickory. In addition to this, each piece of meat is carefully selected and specifically seasoned depending on the loin that you order. Our Sugar-Smoked Tenderloin and James River Tenderloin are also especially cured before they are roasted. And, of course, Gardner's Stuffed Tenderloins have the further distinction of delicious one-of-a-kind pork sausage stuffing's.
"Does Your Sausage have any filler or breading in it?"
No. Gardner's unique sausage stuffings have nothing but meat and seasonings. The Oyster and Pork Sage Sausage in our Tidewater Tenderloin has fresh pork and oysters and a blend of spices. The Pepper and Onion Spice Sausage in Aunt Pat's Spicy Stuffed Tenderloin have diced green peppers, crushed red peppers and diced onions.
"How can I estimate how much barbecue I will need for my event?"
This is a difficult question to answer because Gardner's barbecue is so good that guests tend to eat a lot of it. A good rule of thumb is eight ounces of barbecue for each guest. Keep in mind too, that while we work insure roasts that are fairly uniform in size, our first priority is the quality of the roast.

"What Do You Mean When You Use The Word "Finish" To describe your barbecue?"
When we refer to the "finish" of our hickory-smoked meats, we are am speaking of the exterior of the roasts. The color and texture of the surface of our pork roasts are very important to us. We believe that this is the mark of truly fine smoked meats and it is one of the characteristics of our gourmet barbecue that we have worked for many years to perfect. There is a tendency to burn or char the exterior if the fire, the temperature and especially the smoking process is not carefully attended too. This is one of the reasons that many barbecue restaurants and caterers constantly baste their meat in order to keep the exterior of the pork from burning to a crisp before the center of the meat is cooked. But, Gardner's pork tenderloins are perfectly smoked and beautifully snow white right through to the center.
With the exception of my Aunt Pat's Spicy Stuffed Tenderloin, we do not baste any of our pork loins with barbecue sauce. Each roast is carefully cured and seasoned with spices and peppers to achieve the unique flavor of each offering. The finish is therefore extremely important.
