Here is a delicious, unique smoked pork loin named after a beloved member of my family who lived with my ancestors in Raleigh and taught three generations of daughters her secrets to great cooking.
We begin with a beautiful 5 pound loin of pork and roll it in our special mixture of spices and peppers. Then the loin is gently split and stuff it with almost a pound of our unique Red Pepper, Green Pepper & Onion Pork Sage Sausage. This sausage is medium hot but the mix of spices tempers the peppers and there is a wonderful spicy-sweet after-taste. The roast is then tied with bacon and placed on the smoker. As the stuffed loin slowly roasts over the hickory, the distinctive flavors of the sausage mingle with the pork. When the roast has been smoking for about two hours, the basting process begins. A spicy red barbecue sauce is brushed on the tenderloin every fifteen minutes until the entire surface of the meat is sealed in a mouth-watering spice glaze.
